Okara is a by-product of tofu and soy milk production of which more than 14 million tons go to waste globally every year despite its high nutritional value and fiber content.<\/p>\n<p>Luya has developed a proprietary, patent protected process \u2013 a combination of traditional fermentation methods and modern technology &#8211; to turn okara into delicious foods. The first products are ready-to-cook chunks and burger patties. Using this process, Luya skips all the additives and highly processed protein isolates, and offers 100% natural and organic products made in Switzerland.<\/p>\n<p>The seed round was led by\u00a0<a href=\"https:\/\/redalpine.com\/\" target=\"_blank\" rel=\"noopener\">Redalpine<\/a>\u00a0Venture Partners. Luya, a spin-off from the Bern University of\u00a0Applied Sciences (<a href=\"https:\/\/www.bfh.ch\/en\/\" target=\"_blank\" rel=\"noopener\">BFH<\/a>), previously received the support of the <a href=\"https:\/\/www.grstiftung.ch\/en.html\" target=\"_blank\" rel=\"noopener\">Gebert R\u00fcf Stiftung<\/a>, <a href=\"https:\/\/www.venture.ch\/\" target=\"_blank\" rel=\"noopener\">&gt;&gt;venture&gt;&gt;<\/a>, <a href=\"https:\/\/www.venturekick.ch\/\" target=\"_blank\" rel=\"noopener\">VentureKick<\/a> and <a href=\"https:\/\/www.bfh.ch\/hafl\/en\/\" target=\"_blank\" rel=\"noopener\">BFH-HAFL<\/a>. The newly secured funds will be used to satisfy the rapidly growing demand for Luya\u2019s products, to accelerate R&amp;D for future Luya products, as well as to strengthen Luya\u2019s fermentation platform.<\/p>\n<p>From their offices in Zollikofen (canton of Bern), the Luya team has successfully launched the\u00a0<em>Luya Okara Chunks\u00a0<\/em>and\u00a0<em>Luya Okara Burgers\u00a0<\/em>in selected Swiss restaurants in 2021.
